The guy who posted it is an ex-NPR reporter who now has a really successful cooking channel that is kind of "science-ey". This is a pretty good explanation of what PFAS is- (poly and perfluoroalkyl substances). In short, we're essentially being told it's unwise (and being discouraged) to eat our local freshwater fish.
